Jody’s Mom’s (Elfreda) Potato Salad

I know that we all have our favorite comfort foods. This is one of mine. Being the first of four girls I was the fortunate one. I got to help make all of Mom’s yummy recipes. This potato salad has always been a staple in my life and every summer I try new variations but always go back to the original. Bob likes sweet pickles in his so I cut them up and set them on the side to add.

8 potatoes cooked, cooled and skins peeled
6 eggs cooked, cooled and chopped
1 white onion chopped fine
3 stalks celery chopped fine
Lots of Best foods mayo or Hellman’s
1 to 2-Tbs can milk for added creaminess
Salt and White Pepper to taste
Paprika sprinkle on top
Mix all ingredients together and add can milk last and mix tell creamy consistency. Let refrigerate for 24 hours to blends flavors, but not necessary.
Add chopped sweet pickles for Bob Bitchin
